To serve 8, you will need:
- 1tsp oil
- 1.8kg pork shoulder
- 230ml barbeque sauce
- 120ml apple cider vinegar
- 120ml chicken stock
- 50g light brown sugar
- 1tbsp American yellow mustard
- 1tbsp Worcestershire sauce
- 1tbsp chilli powder
- 2 medium onions
- 3 cloves garlic
- 1.5tsp dried thyme
- The beauty of this dish is that there really aren’t many instructions. Add in all the ingredients into a slow cooker, cover and leave on High for 5-6 hours until the pork falls apart at the touch of a fork.
- Shred the pork with two forks and mix well into the sauce.
- Serve the pulled pork on toasted baps or with spicy rice. Serve with homemade slaw and corn on the cob and voila!
