How To Make Gluten Free Bread
Going gluten-free can be a healthy option for anyone, not just those with allergies. These days, it doesn’t mean going without your favourites, such as bread and cake. Just give this gluten-free bread a go.

To make one delicious gluten-free loaf you will need:
- 40g golden linseeds
- 100ml natural yoghurt
- 450g cornflour
- 475ml warm water
- 1 sachet fast action yeast
- 1tsp salt
- 1tsp caster sugar
- 50g psyllium husk powder
- 50ml olive oil (plus extra to finish)
- Preheat the oven to 180C/gas 4.
- Bake the seeds on a tray for 10-12 minutes or until slightly darker.
- Mix the water and yeast in a bowl and then stir in the yoghurt and seeds.
- Combine the cornflour, salt, sugar and psyllium husk powder in a large mixing bowl and add the yeast mixture.
- Pour in the olive oil and stir well until it forms a smooth thin batter.
- After five minutes the liquid will turn into a sticky dough. When the dough is firm enough, knead it for 10 seconds on the worktop, before returning it to the bowl. Cover the mixture and leave for 30 minutes.
- Line a tray with non-stick baking paper. Shape the dough into a wide line, the length of the tray and brush with olive oil. Cover again and leave for a further 30 minutes.
- Whilst your bread is rising, preheat the oven to 240C/gas 9.
- Uncover the dough and score the top with a sharp knife. Sprinkle with a little cornflour for a rustic look and bake for about 40 minutes, or until rich golden-brown in colour.
- Leave to cool on a wire rack before slicing.
