120g plain flour

140g caster sugar

1 ½ tsp baking powder

40g unsalted butter, at room temperature

120ml milk (whole is best)

1 egg

¼tsp vanilla extract

a pinch of salt

hundreds and thousands or other edible sprinkles, to decorate

12 paper cases and a cupcake tray

Preheat the oven to 170°C (325°F) Gas 3 .

Using an electric whisk (you can do this by hand, but it will take longer), mix the flour, sugar, salt, butter and baking powder, salt and butter on a slow speed. When you get a sandy consistency and everything is combined, gradually mix in half of the milk.

Whisk the egg, vanilla extract and remaining milk separately and then pour into the flour mixture. Scrape any unmixed ingredients from the side of the bowl and continue beating until the mixture is smooth.

Spoon the mixture into the cupcake cases until two-thirds full. Bake in the preheated oven for 20–25 minutes or until a light golden colour. Pierce the centre of a cupcake with a sharp knife – if it comes out clean then the sponge is cooked.

Leave the cakes to cool slightly in the tray before turning out onto a wire cooling rack to cool completely.
