To serve 8, you will need:
- 400g plain flour
- 800ml milk
- 2 tbsp vegetable oil
- Put the flour into a large bowl and make a well in the centre.
- Whisk the eggs and milk in a separate jug.
- Slowly pour the eggs and milk into the flour, whisking until you have a smooth batter.
- Dip some kitchen roll in the oil and wipe the inside of a large non-stick frying pan before placing over a medium heat.
- Pour a ladleful of batter into the pan and swirl it around immediately to get a nice even layer.
- After 40 seconds, use a palette knife to lift the pancake to check if it is a nice golden-brown colour. If it is, flip the pancake and cook for a further 40 seconds.
- Serve with your favourite toppings – we love banana and Nutella and sugar and lemon!
