To serve 8, you will need:

  • 400g plain flour
  • 800ml milk
  • 2 tbsp vegetable oil
  1. Put the flour into a large bowl and make a well in the centre.
  2. Whisk the eggs and milk in a separate jug.
  3. Slowly pour the eggs and milk into the flour, whisking until you have a smooth batter.
  4. Dip some kitchen roll in the oil and wipe the inside of a large non-stick frying pan before placing over a medium heat.
  5. Pour a ladleful of batter into the pan and swirl it around immediately to get a nice even layer.
  6. After 40 seconds, use a palette knife to lift the pancake to check if it is a nice golden-brown colour. If it is, flip the pancake and cook for a further 40 seconds.
  7. Serve with your favourite toppings – we love banana and Nutella and sugar and lemon!
