Spicy Chicken Stir Fry Recipe
Quick and easy, delicious and filling, this healthy dish combines beautiful broccoli, choice chicken and spicy sauce. Ideal as a light lunch, it can be teamed with rice for a low calorie option.

To serve 2, you will need:
- 200g broccoli
- Thinly sliced chicken breast (or leftover roast chicken)
- 1 red onion
- 1 roasted pepper
- 2 tsp olive oil
- 1 tsp chilli powder (however hot you like)
- 1 tbsp soy sauce
- 1 tbsp honey
- 15g ginger
- Cut the broccoli into medium chunks and boil in a pan for 4 minutes.
- Heat the oil in a wok or large frying pan and fry the ginger, garlic, chilli powder and onions for 2 minutes.
- Add the chicken and cook for a further 3 minutes.
- Drain the broccoli and add to the wok along with the soy sauce and red pepper.
- Cook until heated through. Serve on its own or with brown rice or noodles.
