Spicy Chicken Stir Fry Recipe

Quick and easy, delicious and filling, this healthy dish combines beautiful broccoli, choice chicken and spicy sauce. Ideal as a light lunch, it can be teamed with rice for a low calorie option.

To serve 2, you will need:

  • 200g broccoli
  • Thinly sliced chicken breast (or leftover roast chicken)
  • 1 red onion
  • 1 roasted pepper
  • 2 tsp olive oil
  • 1 tsp chilli powder (however hot you like)
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 15g ginger
     
  1. Cut the broccoli into medium chunks and boil in a pan for 4 minutes.
     
  2. Heat the oil in a wok or large frying pan and fry the ginger, garlic, chilli powder and onions for 2 minutes.
     
  3. Add the chicken and cook for a further 3 minutes.
     
  4. Drain the broccoli and add to the wok along with the soy sauce and red pepper.
     
  5. Cook until heated through.  Serve on its own or with brown rice or noodles.
