The Best Blowout Breakfast

Not the healthiest of meals perhaps, but the fry up is a favourite. With so many food types to cook, it can be difficult to get the timings right. Follow our recipe for an occasional blow-out breakfast.

To serve 2, you will need:

  • 4 good quality sausages
  • 4 rashers of smoked bacon
  • 2 large free-range eggs
  • 2 slices of black pudding
  • Tin of beans
  • 4 frozen hash browns (Or try our homemade hash brown recipe)
  • 2 large mushrooms
  • 2 ripe tomatoes
  • 2 slices of bread
  • Oil
  • Tbsp. butter
  • Salt and pepper to season

As you can see, this recipe isn’t for those with a small appetite, so feel free to eliminate items you don’t like or feel you wouldn’t finish.  Many of the ingredients can be cooked in the oven, helping reduce the calorie count, which feels less naughty, right?

  1. Preheat the oven to 180 °C. Place the sausages and hash browns on two separate baking trays.  They won’t need oiling, but both will need turning.  Most take about 18–20 minutes, but check the packaging instructions for both.
     
  2. Spoon the butter across the mushrooms.  Place in the oven on the same tray as the sausages, as the juices will give the mushrooms a lovely flavour.  Cook for 15 minutes.
     
  3. Place the bacon on the same tray as the hash browns and cook for 15 minutes.  Turn the bacon half way through.
     
  4. Empty the beans into a saucepan and heat on a low to medium heat, stirring often.
     
  5. Heat some oil in a frying pan on a medium heat.  Cut the tomatoes in half and season.  Cook for 3 minutes on either side.
     
  6. In the same pan as the tomatoes, fry the slices of black pudding for 2 minutes either side, until slightly crispy.
     
  7. In a separate pan (we didn’t say this recipe was light on the washing up) heat some oil on a medium heat. Fry your bread for 2–3 minutes either side until golden brown.  Add more oil if the pan becomes too dry.
     
  8. Swap the fried bread to the first frying pan and place on a low heat to keep all the food warm.  Add some more oil to the second frying pan and cook the eggs to your liking.  Don’t cook your eggs on too high a heat, or they’ll go crispy.
     
  9. Serve all the delicious food on a warm plate and enjoy!
