Creamy Mushroom Soup
This soup won’t leave ‘mushroom’ for anything else as it’s filling and super tasty, despite it being low calorie. This recipe is really easy to make and way better than our terrible puns, we promise.

To serve 4, you will need:
- 30g butter
- 300g shiitake mushrooms
- 3 garlic cloves
- 2 leeks
- 1 onion
- Salt and pepper, to season
- 700ml chicken/vegetable stock
- 4 tbsp. low fat yoghurt
- Melt the butter in a large pot on a medium temperature and fry off the leeks, onion and garlic until softened and lightly browned.
- Increase the temperature to high and add the mushrooms. Cook for 3 minutes.
- Pour over the stock and leave to simmer for 5 minutes.
- Once cooked, blend the soup.
- Pour into 4 bowls and add a spoonful of yoghurt to each for a creamier finish.
