Low Carb Courgetti Bolognese

This version of the Italian classic is a great way to reduce your carb intake and still feel like you’re eating a fulfilling meal – all for around 325 calories.

To serve 4, you will need:

  • 2 tbsp olive oil
  • 500g turkey mince
  • 2 large carrots, peeled and diced
  • 150g chopped mushrooms
  • 1 tbsp tomato puree
  • 1 finely chopped onion
  • 1 crushed garlic clove
  • 2 x 400g cans of chopped tomatoes
  • 2 chicken stock cubes
  • 1 tbsp soy sauce
  • 4 large courgettes
  • Grated parmesan to serve
  • Handful of basil leaves
  1. Heat 1 tbsp of olive oil in a large saucepan and fry the onion and turkey mince for 8–10 minutes.
     
  2. Add the garlic and after a minute, mix in the carrot and mushrooms.  Stir for about 3 minutes until softened.
     
  3. Pour in the chopped tomatoes, puree and crumble in the stock cubes.
     
  4. Once boiling, lower the temperature and allow the sauce to simmer for an hour.
     
  5. After 55 minutes add salt, pepper and the soy sauce.
     
  6. Spiralise your courgettes with the large noodle attachment.  Heating a large frying pan with the remaining oil and add your courgette.  Fry for 2–3 minutes and season with salt.
     
  7. Serve the Bolognese over the courgetti and sprinkle with parmesan cheese and basil leaves.
