Asian Chicken Salad
This healthy chicken salad with Asian spices is a great way to use your leftover chicken from the Sunday roast. Add some colour and flavour into your lunch with these healthy oriental tips.

To serve 3, you will need:
- Roasted chicken (ideally left over from a roast dinner)
- ½ red cabbage, finely sliced
- 5 spring onions, finely sliced
- 2 red chillies, finely sliced
- 3 carrots, grated
- Handful of roasted salted peanuts or cashews, roughly crushed
- Small bunch of coriander, roughly chopped
- 3tbsp hoisin sauce
- 1 tbsp toasted sesame seed oil
- Shred the chicken into big chunks and put in a large bowl. Add the spring onions, carrots, chillies, cabbage and half the coriander.
- Mix the hoisin sauce and sesame oil in a separate bowl. Add to the large bowl and toss together with the vegetables.
- Serve with the remaining coriander and sprinkle with nuts.
