To make enough frosting for the top of 12 cupcakes, you will need:
- 250g sifted icing sugar
- 80g unsalted butter (at room temperature)
- 25ml milk (whole is best)
- A couple of drops of vanilla extract (any flavour works depending on your cake)
- Use an electric whisk to beat the icing sugar and butter together on a medium speed. Once it forms a smooth consistency, turn the whisk to a slow speed.
- Mix the milk and vanilla extract in a separate bowl. Add a couple of spoons at a time to the butter and sugar.
- When you’ve added all the milk to the mixture, turn the speed of the mixer to a high speed until the frosting is light and fluffy. This will usually take about 5 minutes.
- Spoon or pipe the icing onto your cakes and then enjoy!
